Arteflame grilled Moreton Bay Bugs. This cook had an Australian delicacy, as the main ingredient. We grilled Moreton Bay Bugs, which are a prehistoric looking cousin of a lobster, scampi or Marron only much sweeter. These are native to a particular part of Queensland Coast in Australia, namely Moreton Bay, near Brisbane.

These were grilled directly on top of the grill grates to make sure they picked up a subtle smoke flavour. Once turned they were brushed in a flavoured butter containing

  • 1 stick of Butter
  • 2 x Chopped Fresh Chilli
  • 5 x Minced Garlic Cloves (or more if required)
  • Grated Rind of 1 Lemon
  • Juice of 1/2 Lemon
  • You can then add lots of herbs such as tarragon, parsley, sage etc

The butter was melted in a pan with all of the ingredients. It was then used to brush the flesh and some was kept aside as a dip.

The Bugs are cooked once the flesh turns from translucent to white and the shell turns a reddish colour. To be safe, check them with an internal quick read thermometer and take them off at 145f. You can even make extra butter sauce to dip the Bugs into, once they are cooked. If you are ever in Australia, Moreton Bay Bugs are a must, especially when grilled on the Arteflame
